Cuppa Cake

We couldn’t get our minds off the Cinnamon Toast Crunch Cupcakes the other day. Last week one of our colleagues had come back on Monday with the Cinnapple Muffins. This long weekend proved to be extremely fulfilling too, when we baked some really amazing tasting cupcakes with the following recipe.
(Makes around 20 cupcakes)

Cinnamon Toast Crunch Cupcakes


Cinnamon Cake:
– 3 eggs
– 1/3 cup oil
– ¾ cup buttermilk
– 1 teaspoon vanilla extract
– ¾ cup sour cream
– Vanilla  cake mix
– 1 ½ teaspoon cinnamon

Cinnamon Toast Crunch Buttercream:
230 grams cream cheese, softened
– ½ cup butter, softened
1 teaspoon vanilla
3 cups powdered sugar
2/3 cup cinnamon toast crunch powder


  1. Preheat the oven to 350 degrees and line pans with 20-22 cupcake liners.
  2. In a large bowl, gently combine eggs, oil, buttermilk and vanilla.
  3. Mix in sour cream.
  4. Add cake mix and cinnamon and mix until smooth.
  5. Stir in lightly crushed cereal.
  6. Fill cupcake liner ¾ full and bake for 15-18 minutes.
  7. Buttercream: Beat cream cheese and butter until fluffy. Add cinnamon toast crunch powder. Add vanilla and powdered sugar. Adjust the consistency using milk if it’s too thick.
  8. Pipe the icing onto cooled cupcakes and top with cinnamon sugar and cinnamon toast crunch squares and serve.

Cricket & Cupcakes

India’s playing? Apart from going out to a Sports bar or reclining on the sofa with the T.V. remote in hand, how else do you support the team? Surprisingly, Cricket cupcakes are unusually good when teamed with your celebratory alcoholic concoctions. And when India wins and if some cupcakes are still there in the fridge, you can take them out for a grand celebration.

Here’s what you’ll need to make what one of our colleagues made for the match yesterday. She called them the ‘Cinnapple Muffins’. They were delicious.

  • 1 Egg for 6 cupcakes
  • 1 1/2 cup of milk
  • 1/2 cup of castor sugar
  • 3/4 cup of apples
  • 1/4 cup of vegetable oil
  • 3 tsp of baking powder
  • 1/2 tsp salt
  • 1 tsp cinnamon powder
  • 1 tsp nutmeg
  • 2 tbsp of honey
  • 1/2 tsp vanilla essence

The Steps:

  • Line the cupcake tray with cup cake holders.
  • Mix all the dry ingredients in one bowl.
  • Whisk the egg well for 5 minutes.
  • Add the milk and oil to the whisked egg.
  • Add all the dry ingredients to the mixture of the egg, milk and oil.
  • Add the cut pieces of apples with the honey and vanilla essence.
  • Pour the mixture into the cup cake holders.
  • Cook for about 20 minutes at 180 degrees in the oven
  • Frost when the cupcakes are completely cool.

Serve them with some Cricket-icing.
